Is Bicarbonate of Soda the Same as Baking Soda?
Bicarbonate of soda and baking soda are the same ingredient—sodium bicarbonate. The only difference is the name: “bicarbonate of soda” is used in Ireland and the UK, while “baking soda” is the term in the US.
It works as a leavening agent in baking. When mixed with acidic ingredients like lemon juice, vinegar, or yogurt, it releases carbon dioxide, creating bubbles that help baked goods rise and become light and fluffy. Unlike baking powder, it requires an acid to activate.
